Homemade Biscotti

A whole week worth of wedding related posts my friends. Need a recap?

Moving right along, what is a bridal shower without favors? In keeping with the homemade theme for Jackie's shower (held at our parents' home, all homemade foods, DIY decorations....) I knew I wanted to come up with a favor we'd be able to make.

The idea of biscotti was super daunting to me. I was thinking more along the lines of granola at first. But my mom loved the idea of making these sweet treats for Jackie's shower favors so I  consented and we set a date to bake. 

We decided we would make 4 different flavors - gotta appeal to everyone! And borrowed my MIL's kitchenaide mixer to get two batches going at once - this was a GREAT decision.

 Once the loaves are cooled down, cut them in slices and put them back in the oven to get them golden brown on both sides

 Since we made these the weekend before Jackie's shower, we packaged them up and froze them until Friday to keep them fresh
Besides original and cranberry pistachio, we also made a family recipe that included apricot, white chocolate, and almonds as well as chocolate chocolate chips ones.
My mom refused to get in this picture with me. She must have known it would end up on this blog. :)

Now that I've gotten my feet wet baking biscotti, I'm really looking forward to making some more! I am not a great baker, but these I can handle. Dipping biscotti in my morning coffee is the best indulgence. If you haven't tried it, you should.
